Easy Nigerian Chicken Stew Recipe for a Flavorful Meal

Nigerian chicken stew is a rich and hearty dish that’s easy to make and bursting with flavor. Whether you’re new to Nigerian cuisine or have grown up with it, this stew is sure to become a household favorite. Made with fresh tomatoes, a blend of spices, and tender chicken pieces, this versatile dish pairs perfectly with rice, bread, or yam.

Ingredients

– 1 whole chicken, cut into pieces
– Fresh tomatoes
– Red bell peppers
– Scotch bonnet peppers
– Onions
– Cloves of garlic
– Fresh ginger
– Vegetable oil
– Tomato paste
– Chicken broth
– Seasoning cubes
– Thyme
– Curry powder
– Salt

Instructions

Step 1: Prepare the Ingredients
Start by washing and seasoning the chicken pieces with salt. Set aside. Blend the tomatoes, red bell peppers, scotch bonnet peppers, half of the onion, garlic, and ginger into a smooth mixture. If needed, add a little water to achieve a smooth consistency.

Step 2: Cook the Chicken
In a large pot, cook the seasoned chicken pieces until they are soft and tender. Set aside the cooked chicken.

Step 3: Make the Tomato Base
In another pot, heat vegetable oil over medium heat. Chop the remaining half of the onion and sauté until soft and translucent. Add tomato paste and cook for a few minutes to remove the raw taste.

Step 4: Cook the Stew
Pour the blended tomato mixture into the pot and stir. Let it cook on medium heat for 20-30 minutes, allowing the sauce to thicken and the flavors to develop. Stir occasionally to prevent sticking.

Step 5: Add Chicken and Seasonings
Add the cooked chicken pieces to the pot. Pour in chicken broth or water, and stir to combine. Add seasoning cubes, thyme, and curry powder. Adjust salt to taste, cover, and simmer on low heat for another 20-30 minutes.

Step 6: Final Touch
If the stew is too thick, add a little water to achieve your desired consistency. Stir and let it simmer for a few more minutes. The stew should be rich, flavorful, and vibrant in color.

Serving Suggestions

Serve Nigerian chicken stew with steamed white rice, jollof rice, yam, or bread. Garnish with fresh herbs like parsley or cilantro if desired. This stew can be stored in the fridge for up to three days, with flavors intensifying over time.
